It never fails to amaze me how much our kids (and I don't mean to boast) love my home made spaghetti bolognese, so I thought I should share it with you all and see if you have the same success - do let me know!
I am afraid it won't be an exact recipe, but a step by step guide on how to make it: Based on using 800g of mince for family meal for 2 adults, 3 kids under 9 (freeze the other half) 1. Finely chop (important) 2 medium/large onions in olive oil and brown them well (so they have that nice fried onion smell/flavour) 2. Add in 1 finely chopped clove of garlic but do not brown (tastes bad when you do that) 3. Add in the mince and cook until there is no sign of red meat (add mushrooms now if you wish to) 4. Now add in 1 large desert spoon of plain flour and cook for a couple of mins (helps to make the sauce less runny and thicker) 5. Add 2 400g cans of plum tomatoes (unchopped) and BEFORE you stir in, use a hand blender blender and turn JUST the toms to a pulp - I use plum tomatos as they taste sweeter (I puree in the pan to save on washing up another dish) 6. Now add in:
Serve with lashings of cooked spaghetti and in our case, watch it dissapear with requests for more. This recipe is my very own concoction, and you might think it odd, but it really does work! The nutmeg really makes it. Let me know if you try it - happy cooking with happy faces! Nigel |

Nutmeg sounds like an interesting addition. Other spices worth trying:
sweet moroccan paprika spicy paprika (just a little for taste) oregano basil leaves - dry or fresh |
