Yummy Chickpea and Spinach Casserole
This works well with my lot, though does take a little time to prepare and there are some ingredients you won't normally find at the back of the cupboard. This recipe makes enough for 2.
I find this works well served with thick set (Greek) yoghurt, lemon wedges and tortillas. Heat some of the olive oil and fry the onion and garlic. Mix in the coriander and cook for a minute, adding some of the liquid from the chickpeas, and then add in the potato cooking for 4 or 5 minutes until soft. Next add the chickpeas and the remaining liquid and simmer for 6-8 minutes until the sauce has thickened. While this is happening fry in in the left over oil the red pepper, and when browned, mix into the chickpeas and add the spinach and cook until wilted. Then add the tomato and cook for a few minutes. Finally add the soy sauce and you are done! Hope you enjoy! |
