Thumbs up Moussaka for Cheats!!

This is currently one of my family's favourite recipes so I thought I'd share it with you because not only is it delicious but it is also very easy and quick - hooray . And furthermore, you only need ONE PAN!!!

It is moussaka for cheats! Anyone who has ever made 'proper' moussaka will know what a total faff it is (even though it is worth the effort every so often!) ... well this version takes around 30 minutes including prep time so nice and quick. The recipe is from my new favourite recipe book which is The Family Meal Planner by GoodFood (BBC Books).

Serves 4:
1. Heat 2 tbsp olive oil in a large, shallow pan. Fry 1 large, finely chopped onion and 2 finely chopped garlic cloves until soft.
2. Add 500g of lamb mince and fry for 3-4 mins until browned.
3. Tip a 400g can of chopped plum tomatoes into the pan and stir in 2 tbsp of tomato puree and 2 tsp of ground cinnamon and season generously with salt and pepper.
4. Leave the mince to simmer for 10 mins.
5. Add a 200g jar of chargrilled aubergines in olive oil which you have drained and chopped and simmer for a further 10 mins.
6. To serve, sprinkle 200g of feta cheese and 3 tbsp of chopped fresh mint over the mince, bring the pan to the table and serve with a crunchy green salad and toasted pitta.

I promise you, this is yummy
